It adds new information, life experience, research information that you have found, etc. The student: Amberleigh Bartlett (She/Her) Celiac Disease is a genetic autoimmune disease that mistakes gluten as a foreign object and attacks it, when it get into the small intestine. There is also protein found in wheat, rye and barley that also that the body finds as a foreign. When the body is attacking the supposed foreign object, the bodies immune system goes and attacks to is laying damage to the villi. The villi is located in the small intestine that helps absorbs nutrients from food. When the immune system attacks these villi’s to the foreign objects, they become eroded and flatten and starts having trouble to absorb nutrients. This can also result in GI symptoms and diarrhea. To this it can lead to more health related issues as in malnutrition, anemia, osteoporosis, infertility and nerve issues. To catch the early signs and symptoms fatigue, abdominal bloating and pain, diarrhea, pale, foul-smelling, or fatty stools, and weight loss. Do to that these symptoms goes unrecognized or so subtle people will not see a provider. The problems that comes from loss of nutrient absorption is iron-deficiency anemia, bone or joint pain, arthritis, numbness in hands and feet, missed periods in women, and canker sores inside the mouth. To get a proper diagnoses for this disease is a blood test. To be more specific to get a real diagnosis is doing a biopsy of the small intestine to see if there is any damages of the villi or cells that signal an autoimmune reaction. The way that a person can treat this disease is stop eating gluten. There is a lot of gluten-free food and diets that can be helpful with one that has Celiac disease. One other way that a person with this disease can find a treatment or help is getting a nutritionist.
